SOUR
LENTIL SOUP WITH
POTATOES
In March of this year,
while visiting my friends in Vitaz, I stopped at small restaurant in
near by village on the main road to Presov called Fricovce. There I
was treated to best lentil soup I had ever tasted and reminded me my
mothers cooking while I lived in Czechoslovakia. To create this
masterpiece for ten bowls of soup you will need:
3/4 Lb. of Lentils, 1/4 Lb. of butter, 1/4 Lb. of flour, 2 quarts of broth from beef bones, bay leaf, 1 Lb. of
pealed and cut up potatoes, 1 quart of milk 1 oz. of vinegar, salt and
pepper.
Boil the lentils in the broth until soft. Make soup thickener, sautéed
flour in butter and add the broth to it. Add bay leafs and let it cook for
another 1/2 hour. Add the lentils and cook some more.
In another pot with water
and salt added, cook pealed and cut up potatoes, until they are soft. Add
the potatoes including water to the soup. Add milk and cook some more. You
can add soup spices to the soup and to make it sour add the vinegar. You
can substitute the beef bones for some smoked meat. It tastes great. If
you have any old bread, cut it up in squares, fry in frying pan in little
bit of butter and add to the serving.

traveling through Fricovce call ahead, let them know you are coming,
their daughter speaks English and you can have gourmet meal waiting for
you for less than $ 5.00.
