GRID CAKE
Dough for a larger baking plate:
1 Lb. of all purpose flour, 1/2 Lb. of
icing sugar, 1/2 Lb. of butter, 1 tablespoon of baking powder, 1 tablespoon of
ground cinnamon, 3 egg yolks, 2 whole eggs from which you take about 1/4 for
glazing.
Mix all above ingredients to smooth
dough. Split to two portions (one could be a bit larger). Roll out the larger
half and place it on un greased baking pan. Spread fruit jam of your choice
over the rolled dough. You can also sprinkle the jam with coconut flour; wall
nuts or you can first put a layer of cottage cheese on the dough and cover it
with the jam. From the second smaller portion of the dough make rolls about
1/2 inch thick and place them over jam forming a grid. Glaze the grid with the
saved portion of 1/4 of eggs. Bake at 350 until golden. Cut the cake into
small squares while worm.
